Workout Recap and Meal Planning - Week of March 30

Whoa, the end of March is here!  How did that happen?  Spring has finally sprung here in Colorado, and we had some beautiful weather on Saturday to prove it.  I don't remember the last time I actually felt hot sitting outside.  We spent Saturday afternoon at a nearby playground and it felt luxurious sitting out in the warm sun.  I hope your Saturday was just as relaxing!

WIAW #5: About that Paleo Diet...

It's already Wednesday, which means it's time to connect with others happy to share what they are eating at What I Ate Wednesday (WIAW) with Jenn at Peas and Crayons.  Instead of the usual parade of food photos, I thought it would be fun to mix it up this week and share with you my current journey transitioning to a Paleo diet/lifestyle.

I've been alluding to my Paleo diet here and there in my blog over the last six weeks, and I'd like to talk about it in greater detail, i.e. why I did it (primary reason wasn't about losing weight) and if it "worked" for me (it did!).  About two months ago I stumbled on this thing called Whole30.  Have you heard of it?

Treat Yourself Tuesday #4: Birthday Weekend

This Tuesday, I'm linking up with Becky at Olives n Wine for Treat Yourself Tuesday.  My birthday weekend turned into a weekend of delectable eating, and, there is no better way to treat oneself than to eat loads of good food.

Earlier this week, Lauren, a fellow Denver blogger, chastised me for not citing Denver on my list of cities with good food.  After this weekend of fine dining, I might have to add Denver to that coveted list!

Workout Recap and Meal Planning - March 23

What a great weekend!  And it's only half over!  Spring started showing up here and there in the last week, so I was able to get out on my road bike once this week.  To help with improving my biking outside, I've been trying to fit in 20 minute workouts of ladders, hill repeats, and tabatas with Mindy Mylrea and her Short & Sweet DVD.  The tabatas are especially work as hard as you can for 20 seconds, followed by 10 seconds of rest.

WIAW #4: Portland Edition!

It's time for What I Ate Wednesday (WIAW)!  I am linking up with Jenn at Peas & Crayons for WIAW.  If you haven't heard about WIAW, you can read all about it at Jenn's blog here.

Nothing excites me more than eating than travelling somewhere to eat good food.

I've lived in great cities with great food: Boston, Honolulu, San Francisco, Los Angeles, and San Diego (sorry Denver).  I've also visited great cities with great food: New York City, Vancouver, Las Vegas, New Orleans, Palm Springs, and Charleston.  I had no idea that Portland has great food.

We took a little trip this past weekend to just check out Portland in the springtime (first time visiting).  Their food scene blew me away.

So this WIAW, I am sharing all the delicious things we ate over the weekend in Portland.

It's only Tuesday and this week has not been like all the others.

Maybe it's because we started the week off with a really late return home after a wonderful three day weekend away.

Maybe it's because it's week THREE of home renovations (almost there!) and I just want my house back.

Or maybe it's because I didn't get my exercise in on Monday and my body just needs a chance to shake it all out!

Six Things I'm Glad I Did Pre-Baby

On days when I'm reminiscing, I sometimes think back to my life before I became a parent.  My husband and I decided to become parents rather late in life (I was 35), so I had alot of time to really enjoy life.  After having that much time to dedicate to just you (and a significant other), the first year of parenthood can be a huge eye opener!  The only thing I miss from my pre-parent days is free time.  Knowing that free time is hard to come by these days as a parent, every once in a while, I'll give myself a little pat on the back for all the fun things I did pre-baby.

WIAW #3 (and a walk!)

It's no secret how much I love food!  So of course I'm going to participate in my third What I Ate Wednesday with Jenn at Peas and Crayons.  Just as I did with last week's WIAW, I'm going to share what I ate on Tuesday.

I did a lot of cooking on Sunday and Monday, so several of the meals I ate on Tuesday were leftovers, but they were still so, so good a few days later.

Treat Yourself Tuesday #3

I have no idea where the time has is already time for Treat Yourself Tuesday with Becky at Olives 'n Wine!  

Last week's TYT theme was treating yourself on a budget.  Technically, I'm currently on a budget at all times, since we're now down to one income.  We're not in super tough times, but I have managed to cut out a few of the conveniences I used to not think twice about when we had two incomes: pedicures, online shopping (I window shop now... to dangerous to even launch any of my stores favorite websites), eating dinner out 3-4 times a week.

But, I do manage to fit in a splurge here and there.  And this past Saturday was a day of treats for me...

Weekend Recap and Meal Planning - March 9

How is your weekend wrapping up?  I've been so busy, my weekend feels like it's been a whole week, rather than a mere two-three days (I guess it depends on if you count Friday!)

Friday afternoon I headed off to the grocery store to stock up on veggies for the weekend.  I picked up kale, eggplant, yellow onions, carrots, tomatoes, avocados (my favorite!), limes, basil, thyme, oranges, apples, and strawberries.

Friday night, it was snowing pretty heavily in Denver, so we stayed in and enjoyed pot roast and a vegetable gratin (from one of Deborah Madison's cookbooks...I love her!):

I was glad for the big snow dump on Friday night as it was just beautiful Saturday morning:

Saturday was a much needed rest day after a big week of exercise!  With spring just around the corner, I am back on my road bike...I went out for two 1.5 hour bike rides on Tuesday and Thursday...all to get ready to go on my first time pulling my son behind my bike in a bike trailer.  Normally I go on all my bike rides with my husband and HE pulls the trailer.  

So on Sunday...I did it!  I went out on my road bike and I pulled my son behind me.  My husband is training for a marathon in May, so we headed out at the same time, and he promised that if I ran into any problems with the bike or the bike trailer, he would run over and help me out.  It turns out, he didn't need to help me out at all.  My son and I managed fine and we were out there for about about an hour and a half, not counting our Starbucks stop on the way home.  I can't wait to get out there again!

Meal Planning for Week of March 9
My husband is going on a very long business trip (read: Monday night through Friday), so there won't be any grand meals this week.  I'm going to be dipping into the reserves in our freezer as well as continue my experimentation for tasty paleo recipes.  I still owe you all a post about my efforts to move towards a Paleo diet (I'm taking baby steps!) and I hope to have that up soon.  Here's what I'm thinking for a week of my son and I dining on our own...

Life By The Hour

Happy Thursday!  The week is quickly coming to an end...hooray for the weekend!

I love reading Brittany's blog A Healthy Slice of Life for all her great tips on eating, living, and generally being healthy, but when I saw her post "Life by the Hour" a few weeks ago, I thought, I love the idea of capturing a full day, hour by hour.  One day, I'll look back and probably think, ahhh, the good old days!

Life is pretty sweet right now.  I'm currently between jobs, and my son still goes to daycare five days a week even though I am at home not working.  My husband and I thought about taking my son out of his daycare when I stopped working, but we've seen some amazing developmental changes thanks to the daycare, and we think that at his age, socialization is really important for him.  So while our little one is at school, I have some of the best free time I've ever known, having worked a 40-hour job for a good 15 years.  For now, I get to enjoy being at home, getting in shape, keeping the house in order, searching for (and cooking) great new healthy meals, and... oh yes, continue searching for new employment.

What I Ate Wednesday #2

I had so much fun at my first What I Ate Wednesday link up party with Jenn at Peas and Crayons, that I am back for another one!  I was away last week on vacation, but now that we're back home in Denver, it's time to get back to clean eating.  OK, mostly clean eating.  Here's a snapshot of everything I ate on Tuesday.

Breakfast: I'm all about eggs in the morning these days as I'm trying to eat paleo as often as possible.  This morning's omelette had red bell peppers, green onion, and a little garlic.

Lunch: every once in a while, my husband finds time to break away from work and meet me for lunch.  We had a not-so-paleo lunch at our favorite Vietnamese restaurant.   For appetizers, we had some deep fried spring rolls (so divine it was hard not eat more than one!).  For my main course, I had the Vietnamese salad with pork: lettuce, cucumbers, tomatoes, and the dressing on the side, which I barely needed, the pork was so flavorful.

Dinner: I've been wanting to try out this recipe for paleo Mexican chicken soup and I finally got around to making it for dinner last night.  Secret ingredient: cauliflower!  It gets blended into the soup and it's a great thickener adding body.  We're adding this dish to the dinner rotation!!

Snacks: today was not a big snacking day for me, but I did treat myself to a 2% no whip hot chocolate from Starbucks mid-morning and some sliced apples with almond butter in the afternoon.  Sorry, I forgot to take photos of these treats.

Treat Yourself Tuesday #2

Having just returned from vacation, I have some great moments to share this week with all of you and at Becky's weekly link up, Treat Yourself Tuesday.

The week before our trip, I treated myself to a pedicure, a facial, and a shopping trip to get some new clothes for warmer weather.  In February, I spent two weeks cleaning up my eating.  I decided to go Paleo (no grains, no sugar, no dairy, no legumes).  I was on the diet for only two weeks, but I lost the most stubborn pounds, those last ones that are the hardest to shed.  I lost three pounds, which meant I had to go buy some new shorts!  I hit my favorite store, J.Crew, and got the outfit below along with a few other items.

After two weeks of no sugar, no alcohol, no treats, I was ready for a few liquid calories.  Through the week, I enjoyed a biscotti martini (first one I've ever had), a mojito, and a decadent cup of hot chocolate (complete with a mountain of whipped cream).

And no trip would be complete without some fabulous food.  I broke my no-bread/pasta/rice diet with wine & cheese (and bread!) at a lovely French restaurant.  We also discovered that Orlando is home to a burgeoning Brazilian community and we had some amazingly authentic food that I haven't had since we vacationed in Sao Paulo and Rio de Janeiro a few years ago.  I also squeezed in a few desserts, like this chocolate duo below.

To wrap up our vacation on the right note, we spent the last day just lounging at our hotel.  I started my day with a workout and then we hung out by the pool for much of the day, until my little boy was so exhausted he needed to go down for his nap.  It was a GREAT holiday.

Back from Vacation!

Hi everyone, I'm back from our family trip to Orlando!

I'm still new to the blogging world and couldn't manage to get any guest bloggers to fill in during my absence, but I've been following several of your blogs and I am happy to be back!

I can't believe it's already March!  Thanks to Angela at HappyFitMama I'm ready to jump into March with her monthlong fitness challenge, HappyFitMarch Challenge.  I'll be posting every day on Instagram to ensure I'm keeping up with each daily challenge...follow me at SuperSmartMama to see how I'm doing.

We just returned home Sunday, but I hope to be back up and posting regularly this week.  I planning on checking in with Becky at Olives 'n Wine for Treat Yourself Tuesday and Jenn at Peas and Crayons for What I Ate Wednesday.  Maybe I'll meet up with some of you at either of these link parties!

For now, let me leave you with a few photos from our week in Orlando.  We spent four days at Walt Disney World, one day at Cape Canaveral, and two days just lounging around our hotel... it was hard to leave 75F degree weather and come back to Denver, where it is currently in the low 30s.  Bleah!
